With a different focus every year, this time the Richland County Nutrition Coalition will concentrate on “Vary Your Veggies.”
Members of the coalition say they want to show the public the different ways to use vegetables. “Many people have lots of fresh produce around that many people are looking for different ways to prepare them,” Judy Johnson, a coalition member, said.
Those manning the booth will offer tips on selecting and storing fresh vegetables, various ways to make vegetables “more interesting,” and information on gardening and freezing vegetables. These healthy produce are easy to prepare, so easy-to-prepare recipes will be given to patrons as well.

The coalition wants everyone to know there are many benefits to eating vegetables. “Compared to people who eat only small amounts of fruits and vegetables, those who eat more generous amounts – as part of a healthy diet – are likely to have reduced risk of chronic diseases,” Johnson said. “These diseases include stroke, type 2 diabetes, some types of cancer, and perhaps heart disease and high blood pressure.”
